These guys tend to shut down early. The night market in Beijing closes at nine at night. While in Hong Kong it went much later. I think it is to do with the Law & Order Philosophy of the Government. I went to Hong Kong in 1977 and couldn't believe how great the night market was. Went back in 2018 and it was a shadow of it's former self. Start early & finish early.
